  1. My 47 month grandson had his second anapylactic allergic response to legume protein last week. He is now of day-care age and was able to tell the teacher that his mouth was itching. Daycare personnel alerted parents who were able to provide timely emergency treatment at a nearby hospital in a metropolitian area.
    My grandson’s peanut allergy had been identified earlier as a toddler and had required the same emergency hospital treatment.
    Legume proteins are in expansive use in today’s food systems. What exactly is the allergic component of the protein. Is it the child’s lack of specific enzymes to metabolize these legume proteins? Do most allergic tests provide specific indications about legume proteins?
